I dunno where that idea got started… while obviously it’s Vader’s signature move (one theory being that he’s inspired by his own difficulty breathing), he is in fact the only dark Jedi we see doing it – the others prefer lightning. We also see Luke choking a couple of Gamoreans in Jedi. So, just as many regular Jedi as Dark Jedi choke people in the films…
